I’ve been obsessed with enoki mushrooms and these enoki beef rolls are so fun and easy to make. I always keep some thinly sliced hotpot meat in the freezer for quick and easy meals and to make this you just need a pack a enoki mushrooms for a flavor dish! Ingredients 1 lb thin sliced beef 1-2 tbsp cooking oil 1 onion sliced 2-3 cloves garlic chopped 1 pack enoki mushrooms trimmed and separated into tiny bundles Sliced green onions Sesame seeds 3 eggs beaten For sauce: 1/4 cup soy sauce 1/4 cup water 2 tbsp honey 1-2 tbsp dark soy sauce Ground black pepper 1. Wrap thinly sliced beef around small bouquets of enoki and set aside. Whisk together sauce ingredients. 2. In a pan sauté onion in oil until softened 3-5 minutes. Add garlic and sauté another 30 seconds. Using onions and garlic as a bed, stack enoki beef rolls in pan. Drizzle sauce and bring to a boil. Once boiling, cover reduce heat to low and cook 3-5 minutes. 3. Uncover and add eggs. Cover and cook another 3-5 minutes. Garnish with green onions and sesame seeds.
