🇳🇬Ogbono Soup w/ Fufu This delicious Nigerian meal is one of those dishes I’ve always wanted to try but the ingredients are so difficult to source from my country and there are very few places that offer this. This rich stew made with Ogbono seeds (which gives it its slimy thick texture like okra) has a very distinct flavor that’s difficult to describe. It’s smoky, meaty and savory! Best paired with fufu (made with plantain/cassava) I hope to try the authentic version one day! ❤️ Ingredients: Ogbono soup: - 2 kgs goat meat - 1/2 kg ox tripe - 1/2 kg pomo (beef skin) I didn’t have but its highly recommended - 1 onion/habanero pepper, minced - 4 cups stock (from cube) - 4 pcs Stock fish (dried fish) - 3/4 cup red palm oil - 1/2 cub ogbono seeds, ground - 1/2 cup smoked fish - 1/4 cup crayfish powder - kale leaves, chopped (Uziza leaves are best used) Fufu: - I used ready to make plantain fufu flour cooked to package directions Instructions: - Boil your goat meat, tripe and stock fish along with your onions and pepper in stock until tender (3-4hrs). Remove meat from pot and set aside. - Dissolve ground ogbono seeds in red palm oil and add to broth. Mix until thick and slimy and add boiled meats back in along with smoked fish, crayfish powder.
