Final exam time! wanted to try something fun for one of my final exams so here’s a POV view of me going through my test. This test was a 2 hour practical where we had to filet and skin a flounder than use it with 2 other vegetables, 1 sauce, 1 starch, and garnish and present to our chef for grading. I had lots of fun pushing myself for this exam and really trying not to be too messy (even though I was hahaha). This was a thai inspired green curry with a flounder and nori mosaic, topped with a basil emulsion, thai fried basil, basil oil, on a bed of rice with pickled zucchini and broccoli stem. i just had my practical exam the other day and here is my chef grading my food and everything i was thinking about during it! we made a pan seared new york strip steak with glazed baby carrots, pommes persillade and a red wine pan sauce. i felt really good about the food i put on the plate and i thought all the tastes were good so i was feeling not too bad when i presented my plate. my chef gave me a bunch of critique and i was worried i hadn’t done well, but i ended up getting a 96. honestly i was a bit confused and i asked my chef how i got a 96 since i was thinking i would have done worse and he said he was just extra critical because it was the end of the module and he just wanted to remind me to keep on improving since we should strive to get better and better and be as perfect as possible with all of our components for each dish. i am so grateful to him as my chef for this module and i am grateful for everything i have learned and will continue to keep on working as hard as i can and i hope you all enjoy the journey :D #fyp #culinary #culinaryarts #culinaryschool #culinarystudent #culinaryexperience #chef #food #cook #cooking #grade #review #test #exam #pressure #nervous #teacher #student #pov #thoughts #foodtok #cooktok

here’s my chef grading the dish we had to make for our third exam here at ICE! we made a pan seared filet of sole with a brown butter, lemon, and parsley sauce with a side of spinach and tourne potatoes (football shapes with 7 sides). i was pretty nervous about this plate because i had forgotten to plate my potatoes but was lucky enough to take my plate and add them before he started grading. i was pretty happy overall with how i had cooked everything for the most part, but i know i could have been much much better at organizing and working cleanly and smoothly. the fact that i had forgotten about my potatoes was something that i knew i should have just put in the slightest more effort in, but regardless i did a pretty okay job. this marks the end of our 3rd course and the start of the second half of our 2nd module which is going to focus on plating, restaurant simulation and so much more! i am super excited to keep on improving and going through this journey with all of you, i can’t wait to keep on learning :D #fyp #culinary #culinaryarts #culinaryschool #culinarystudent #culinaryexperience #chef #food #cook #cooking #learn #test #grade #judge #exam #rate #critique #present #plate #nervous #student #teacher #dayinmylife #foodtok

The tips and tricks to making the PERFECT steak every time 🥩🔥 Cooking a perfect steak is definitely a tall order, but with the proper technique it is a lot easier than you think. Tips & tricks: 🔪 Start with a thick cut steak, especially if you like your steak medium rare. This will give you a buffer to ensure you don’t over cook the steak…steak cooks quicker than you think. 🔪 Season the steak generously with salt and pepper from high above — this will make sure you get an even coating of salt — and allow the steak to come to room temperature before cooking. 🔪Get your pan VERY HOT. Once the pan is hot, add a touch of neutral oil and then add the steak. You’re looking for a fast,hard sear to lock in the juices — NOT to cook it all the way though (depending on the thickness!) Start with the fat cap, then sear one side and after its golden brown, flip and immediately baste! 🔪 Add in aromatics (garlic, rosemary, thyme etc.) after flipping, along with butter as you baste. This will infuse a wonderful subtle flavor. 🔪Finish cooking the steak in the oven. I like it at 375 F, typically for around 5-7 minutes for a 2 inch steak. Once you reach an internal temp of 130 (for medium rare) pull it out and allow it REST! The allows the juices to set (instead of drain out) and brings the steak to the proper temp. . . . #steakrecipe #perfectsteak #culinaryschool #learntocook

here is the full recipe and procedure for the steak dish i made for my culinary exam this past week! it’s a pretty simple steak with pan sauce, potatoes, and carrots but super tasty and definitely a good way to practice your technique! it was a perfect way to end off our second module at culinary school and even though i got a good score, there was plenty to improve on. if you see me in the video, i was being extra careful with my potatoes, but honestly i should have been closer to the heat and just going for it because my potatoes were absorbing too much fat/oil into them instead of getting crispy. my steak and pan sauce turned out exactly how i wanted and if you havent made a pan sauce, they are so delicious (and sub the red wine for balsamic/red wine vinegar if you can’t have!). the carrots glazed in stock and butter are rich but sweet and go really well with the other flavors on the plate. looking back on these past 2 modules it feels like so long ago because i’ve learned so so much. thanks so much again to all of you who have decided to join me on this journey and to many more recipes, lessons, and learning in the future. as always if you have any questions feel free to comment below or message me :D 1 strip steak (trimmed) salt + pepper (and any other preferred seasonings) garlic + thyme + butter (optional for basting) 2 tsp minced shallot 1 fl oz red wine (sub red wine/balsamic vinegar) 4 fl oz veal/beef stock 1 tbsp whole butter (cold) 1-2 potatoes (peeled, medium dice) 1-3 cloves minced garlic (to taste) 1 oz butter finely chopped parsley (about 1 oz) 3-5 baby carrots (if you can’t get just chop regular carrots) chicken stock (just enough to cover) 1 oz butter #fyp #culinary #culinaryarts #culinaryschool #culinarystudent #culinaryexperience #chef #food #cook #cooking #learn #learntocook #recipe #exam #test #grade #followalong #teach #student #foodtok #cooktok

Here’s how I did on my first final exam of culinary school! We have been prepping and getting ready for these exams for a few lesson now, and our first of two exams is all about making a dish starting with a whole fish and a set list of ingredients. I wanted to do something fun but also complicated to challenge myself and I definitely had a lot of components and different things to focus on while I was making this dish. I also wanted to make an effort to stay as clean and organized as possible throughout the exam and I ended up making something that I am really proud of taste wise, but not so much conceptually and visually. In hindsight I should have had three pieces of the mosaic on the plate each individually garnished and with contrasting colors (my idea was to have it monochromatic, but it ended up being too much) but still I had a lot of fun winging all of the recipes and making this dish come together in just a couple of hours. I really can’t believe that there is only one more lesson to share with you all, it really is just the beginning of our culinary journeys together, and there is so so so much more I am excited to share with you. day 53 of culinary school @iceculinary and we are taking a little breather and getting some practice for our exam tomorrow! we are basically doing the entire test today and since we have a little extra time we are also getting a quick look at the tandoor oven. we started by marinating our chicken thighs for later and then worked at our own pace for the steak. i wasn’t rushing but i felt like i wasn’t extremely focused and my steak reflected that. i knew what i had done wrong but double checked with my chef that way i could build a game plan for tomorrow and really focus in. after that was finished though i had plenty of time and had fun making huge skewers of chicken. i didn’t even know we had a tandoor oven in the building until i followed my chef to a different kitchen where it was! it was fun learning how to use a new piece of equipment today but i still wish i wasn’t so zoned out when making my steak dish. regardless, tomorrow is a new day and i’m gonna prepare and do my very best for the end of module 2! as always if you have any questions at all, feel free to comment below and i hope you all have amazing mondays :D #fyp #culinary #culinaryarts #culinaryschool #culinarystudent #culinaryexperience #chef #food #cook #cooking #learn #learntocook #teach #student #lesson #review #testprep #steak #chicken #foodtok #cookingtok

Final written exam! But not really hahaha. This was the last day before our practical exams where we took our written exam for a bit of the class and then were given the rest of the time to practice making vegetables and sauces for our final. A lot of people in class were hungry and didn’t really feel like making a mess of pots and pans because we didn’t have too much time, so me and a friend just decided to make some food for everyone. here’s my chef grading the dish we had to make for our third exam here at ICE! we made a pan seared filet of sole with a brown butter, lemon, and parsley sauce with a side of spinach and tourne potatoes (football shapes with 7 sides). i was pretty nervous about this plate because i had forgotten to plate my potatoes but was lucky enough to take my plate and add them before he started grading. i was pretty happy overall with how i had cooked everything for the most part, but i know i could have been much much better at organizing and working cleanly and smoothly. the fact that i had forgotten about my potatoes was something that i knew i should have just put in the slightest more effort in, but regardless i did a pretty okay job. this marks the end of our 3rd course and the start of the second half of our 2nd module which is going to focus on plating, restaurant simulation and so much more! i am super excited to keep on improving and going through this journey with all of you, i can’t wait to keep on learning :D #fyp #culinary #culinaryarts #culinaryschool #culinarystudent #culinaryexperience #chef #food #cook #cooking #learn #test #grade #judge #exam #rate #critique #present #plate #nervous #student #teacher #dayinmylife #foodtok

The tips and tricks to making the PERFECT steak every time 🥩🔥 Cooking a perfect steak is definitely a tall order, but with the proper technique it is a lot easier than you think. Tips & tricks: 🔪 Start with a thick cut steak, especially if you like your steak medium rare. This will give you a buffer to ensure you don’t over cook the steak…steak cooks quicker than you think. 🔪 Season the steak generously with salt and pepper from high above — this will make sure you get an even coating of salt — and allow the steak to come to room temperature before cooking. 🔪Get your pan VERY HOT. Once the pan is hot, add a touch of neutral oil and then add the steak. You’re looking for a fast,hard sear to lock in the juices — NOT to cook it all the way though (depending on the thickness!) Start with the fat cap, then sear one side and after its golden brown, flip and immediately baste! 🔪 Add in aromatics (garlic, rosemary, thyme etc.) after flipping, along with butter as you baste. This will infuse a wonderful subtle flavor. 🔪Finish cooking the steak in the oven. I like it at 375 F, typically for around 5-7 minutes for a 2 inch steak. Once you reach an internal temp of 130 (for medium rare) pull it out and allow it REST! here is the full recipe and procedure for the steak dish i made for my culinary exam this past week! it’s a pretty simple steak with pan sauce, potatoes, and carrots but super tasty and definitely a good way to practice your technique! it was a perfect way to end off our second module at culinary school and even though i got a good score, there was plenty to improve on. if you see me in the video, i was being extra careful with my potatoes, but honestly i should have been closer to the heat and just going for it because my potatoes were absorbing too much fat/oil into them instead of getting crispy. my steak and pan sauce turned out exactly how i wanted and if you havent made a pan sauce, they are so delicious (and sub the red wine for balsamic/red wine vinegar if you can’t have!). the carrots glazed in stock and butter are rich but sweet and go really well with the other flavors on the plate. looking back on these past 2 modules it feels like so long ago because i’ve learned so so much. thanks so much again to all of you who have decided to join me on this journey and to many more recipes, lessons, and learning in the future. as always if you have any questions feel free to comment below or message me :D 1 strip steak (trimmed) salt + pepper (and any other preferred seasonings) garlic + thyme + butter (optional for basting) 2 tsp minced shallot 1 fl oz red wine (sub red wine/balsamic vinegar) 4 fl oz veal/beef stock 1 tbsp whole butter (cold) 1-2 potatoes (peeled, medium dice) 1-3 cloves minced garlic (to taste) 1 oz butter finely chopped parsley (about 1 oz) 3-5 baby carrots (if you can’t get just chop regular carrots) chicken stock (just enough to cover) 1 oz butter #fyp #culinary #culinaryarts #culinaryschool #culinarystudent #culinaryexperience #chef #food #cook #cooking #learn #learntocook #recipe #exam #test #grade #followalong #teach #student #foodtok #cooktok

Here’s how I did on my first final exam of culinary school! We have been prepping and getting ready for these exams for a few lesson now, and our first of two exams is all about making a dish starting with a whole fish and a set list of ingredients. I wanted to do something fun but also complicated to challenge myself and I definitely had a lot of components and different things to focus on while I was making this dish. I also wanted to make an effort to stay as clean and organized as possible throughout the exam and I ended up making something that I am really proud of taste wise, but not so much conceptually and visually. In hindsight I should have had three pieces of the mosaic on the plate each individually garnished and with contrasting colors (my idea was to have it monochromatic, but it ended up being too much) but still I had a lot of fun winging all of the recipes and making this dish come together in just a couple of hours. I really can’t believe that there is only one more lesson to share with you all, it really is just the beginning of our culinary journeys together, and there is so so so much more I am excited to share with you. day 53 of culinary school @iceculinary and we are taking a little breather and getting some practice for our exam tomorrow! we are basically doing the entire test today and since we have a little extra time we are also getting a quick look at the tandoor oven. we started by marinating our chicken thighs for later and then worked at our own pace for the steak. i wasn’t rushing but i felt like i wasn’t extremely focused and my steak reflected that. i knew what i had done wrong but double checked with my chef that way i could build a game plan for tomorrow and really focus in. after that was finished though i had plenty of time and had fun making huge skewers of chicken. i didn’t even know we had a tandoor oven in the building until i followed my chef to a different kitchen where it was! it was fun learning how to use a new piece of equipment today but i still wish i wasn’t so zoned out when making my steak dish. regardless, tomorrow is a new day and i’m gonna prepare and do my very best for the end of module 2! as always if you have any questions at all, feel free to comment below and i hope you all have amazing mondays :D #fyp #culinary #culinaryarts #culinaryschool #culinarystudent #culinaryexperience #chef #food #cook #cooking #learn #learntocook #teach #student #lesson #review #testprep #steak #chicken #foodtok #cookingtok

Final written exam! But not really hahaha. This was the last day before our practical exams where we took our written exam for a bit of the class and then were given the rest of the time to practice making vegetables and sauces for our final. A lot of people in class were hungry and didn’t really feel like making a mess of pots and pans because we didn’t have too much time, so me and a friend just decided to make some food for everyone.
