Crispy Chilli oil. Full recipe below.. I can’t express to you how much I love this stuff, it’s amazing on most things if I was honest. Noodle dishes, Rice dishes, Eggs.. I’ve had it many times on just cheese on toast. It’s a game changer not a term I use lightly. 3 thinly sliced shallots 6 thinly sliced garlic cloves 1 cinnamon stick 1 bay leaf 200ml veg/peanut oil 3 tbsp chilli flakes 2 tbsp chilli powder 2 tbsp sugar 1 tsp salt 1 tbsp soy sauce 1 1/2 tbsp sesame seeds 1. Heat the sliced shallots, sliced garlic, bay leaf and cinnamon stick in the oil over a medium heat. When it becomes golden and crispy remove from the oil 2. Add the chilli flakes, chilli powder, sugar and salt to a mixing bowl. Pour over the hot infused oil (ideally 115c-120c) and mix well. 3. Add the shallots and garlic back to the chilli oil leaving the bay and cinnamon out. Allow to cool 4. Stir in the soy and sesame.
