Share + Save - This mouthwatering Vegan Mushroom Fried Rice is a banger and definitely restaurant quality + it’s easy to make! You won’t miss meat when you’ve got shrooms. 🍄 Would you try this? Ingredients: * 2 cups cooked and cooled rice (preferably day-old) * 2 tablespoons olive oil * 1 small yellow onion, diced * 2 cloves garlic, minced * 1 cup mixed vegetables (e.g., carrots, sweet peppers, broccoli) * 2-3 tablespoons soy sauce or tamari (adjust to taste) * 1 teaspoon sesame oil * 1/2 cup chopped green onions * Optional: mushrooms or tempeh for added protein (cubed and sautéed separately) Instructions: * Heat the vegetable oil in a large skillet or wok over medium-high heat. * Add the diced onion and minced garlic. Sauté for 2-3 minutes until the onion becomes translucent. * Add the mixed vegetables to the skillet. Stir-fry for another 3-4 minutes until they start to soften. * If you’re adding tofu or tempeh, sauté it separately until it’s lightly browned, and then add it to the skillet with the vegetables. * Add the cooked rice to the skillet. Break up any clumps and stir-fry for about 5 minutes until the rice is heated through and begins to turn slightly crispy. * Pour the soy sauce or tamari over the rice and vegetables. Stir well to evenly distribute the sauce. Adjust the amount to your taste. * Drizzle the sesame oil over the fried rice and stir to combine. * Finally, add the chopped green onions and stir them into the rice for an additional minute. * Taste the fried rice and adjust the seasoning if needed. * Serve your vegan vegetable fried rice hot, garnished with additional green onions if desired. #vegan #foodreview #food #veganrecipes #foodscene #cooking #recipe #veganblogger #veganlifestyle #veganblog #veganlife #foodie #Plantdaddy #foodiesofinstagram #foodie #vegansofig #fyp #viral #asian
