A super quick & tasty lunch with Ainsley Couscous 😋 HOT HONEY HALLOUMI, COUSCOUS & HUMMUS WRAPS Wraps are great to make for a quick and tasty lunch and adding our flavoured couscous to the filling makes for a delicious and satisfying bite. The sweet honey with a kick of chilli works beautifully with the salty halloumi. The ingredients can be prepared in the time it takes for the couscous to become nice & fluffy. Share your speedy #ainsleycouscouscreations   Ingredients: 1 x packet of Ainsley Tomato & Chilli Couscous 1 block of halloumi 1 carrot 1 tbsp light olive oil ¾ tsp chilli flakes 3 tbsp runny honey 4 medium soft wheat or corn tortilla 4-5 tbsp shop bought hummus Large handful of baby spinach leaves   Prepare the couscous according to the packet instructions.   Heat a frying pan or griddle over a medium-high heat. Slice the halloumi into 1cm thick strips and grate the carrot. Heat 1 tbsp of oil and the chilli in the pan and fry the halloumi slices for a minute on each side. Drizzle with the honey and cook for a minute longer.   Meanwhile warm the tortilla according to the packet instructions.   Spread the tortilla with some hummus, top with couscous, carrot, spinach and the honeyed halloumi. Drizzle with any honey from the pan and roll up the tortilla. Halloumi Chorizo Pasta 🧡 recipe: 2 cloves garlic 1 onion 225 g halloumi 50 g chorizo 2 bell peppers (1 red & 1 yellow) 200g cherry tomatoes 8 sundried tomatoes 200 g crème fraiche 1 tbsp tomato paste 1 tsp oregano Salt & pepper 150 g spaghetti 1. Cut the garlic, onion, chorizo, bell pepper, cherry tomatoes and sundried tomatoes in small pieces. 2. Fry the onion and garlic for 1 minutes. Place them on half of the pan. Add the halloumi to the other half of the pan and fry till golden brown. 3. Take out the halloumi. Cut half of it in small pieces. 4. Add the chorizo the onion and garlic. Fry till crispy. 5. Add back in the small pieces of halloumi together with the bell pepper and cherry tomatoes. Fry for 5-8 minutes. 6. Add the sundried tomatoes, crème fraiche, tomato paste, oregano, salt and pepper. Let it simmer for 2-3 minutes or until the tomatoes are soft. 7. In the meantime, bring water to the boil and cook the pasta. 8. Add the pasta to the sauce. This beautiful bread is the lovechild of two of my most popular recipes - Kıbrıs Çöreği (Cypriot Seeded Loaf) and Hellimli Zeytinli Kek / Bulla (Halloumi and Black Olive Cake / Loaves). The cracked green olives on my plate are the “cakistez” I made using the olives from my mum and dad’s garden and the hellim I’m using is homemade from a little village called Ötüken, not far from Gazimağusa (Famagusta) and it’s beautiful. Mix everything together really well and leave to one side. Place the puff pastry pieces on a large piece of parchment paper, and lift onto a large shallow baking tray. Score along the perimeter of each piece of pastry, 2cm in from the edges. Fill the centre of each piece of pastry with equal quantities of the filling, whisk the remaining egg and brush along the exposed pastry perimeters, sprinkling the seeds along the egg-washed perimeter too. Mix together the sliced onions and honey, top each filling with the honey onions, drizzle liberally with olive oil then bake in the oven for 20-25 minutes until beautifully golden brown.
