CHEESY BEEF TACO SOUP Ingredients: * 1lb lean ground beef * 1/2 onion diced * 1 cup beef broth or chicken broth * 2 cups of water * 1 can diced tomatoes * 1 can fire roasted tomatoes with green chilies * 1/2 packet taco seasoning * 6-8 oz velveta cheese cubed * 1 cup corn * 1 can black beans rinsed Method: 1. Peel and dice the onion. In a large stock pot, brown ground beef over medium heat with onion until beef is fully cooked. Drain and rinse, if desired. 2. Place pot back on stove top over medium heat. Add in Velveeta cheese on top of the cooked beef. 3. Pour in broth, black beans, corn, tomatoes and taco seasoning. 4. Mix together and heat until Velveeta is melted and soup is smooth. 5. Serve topped with your favorite taco toppings (sour cream, guacamole, pico de gallo, shredded cheese, etc).
