Sausage roll 🇳🇿 Ingredients: makes 14 - 1kg pork mince - 1 egg - 1 carrot - 1 brown onion - 3 cloves garlic - 200g bacon - 1 tbsp fennel seeds - 1/4 cup breadcrumbs - 3 sheets puff pastry - 1 egg + 1 tsp water (egg wash) - Sesame seeds 1. Dice bacon and fry off until browned and some fat has rendered. Add fennel seeds and cook for 30 seconds 2. Peel carrot, onion and garlic then blend in a food processor until super fine diced (not paste). Add to pan with bacon and fennel. Season with a touch of salt and cook for 5-10 mins on medium/low to cook out the water and soften the veg. 3. In a large bowl add pork mince, egg, breadcrumbs, 1 tsp salt, 1 tsp fresh black pepper and the cooked veg/bacon mix. Mix until all ingredients are well combined and transfer to a piping bag. 4. Lay 1 sheet of puff down and pipe a line of filling on each end parallel to each other. Cut directly in the middle and roll each side starting at the meat and rolling towards the empty pastry. Lightly brush with egg wash on the last centimetre to seal the roll. 5. Evenly spread out on a lined baking sheet, brush with more egg wash on the top and sprinkle with sesame seeds. 6.
