Save this recipe for Korean Japchae! It’s a great side dish with dinner and perfect to bring to potlucks. Start by boiling one bundle of the sweet potato starch noodles for 5-6 minutes. Drain, rinse under cold water and cut up with scissors. Next make the sauce which is 1/4 cup of soy sauce, 1/4 of sesame oil and 1 tbsp of brown sugar. The last part is a little tedious because you have to cut up all the vegetables and cook it individually. You can cook them all together to save time, but remember to add the spinach last because that cooks fast. I sprayed the pan with oil and I started with sliced onions, cooked for a few minutes, removed from pan, then spray oil again and the sliced shiitake mushrooms, repeated this process with bell peppers, carrots, spinach, garlic and green onions. Then it’s just assembling all the ingredients in the bowl with the noodles, sauce and a sprinkle of sesame seeds #japchae #koreanfood #recipevideo
