Chicken Elote Flautas🌽 #recipes #flautas #elote #recipesforyou Start out by making the marinade for the chicken with: -1/2 cup of fresh squeezed lime juice -1/3 cup of olive oil -4 cloves of minced garlic -season to taste with Tajín, Sazon, and Chicken Bouillon Powder Mix this together and then get 4 chicken breasts, poke holes in them with a fork, and marinate them in the fridge for 1 to 3 hours. Then get about 7 ears of fresh corn and coat them in olive oil. Throw your chicken onto the grill along with the corn. When they’re done, shave the corn off of the cob and cut the chicken into small pieces. *If you don’t have a grill, you can sear the chicken in a skillet. You can also use fresh frozen corn instead, and just sauté it in a skillet. Then in a bowl add: -4 cups of cooked corn -the chicken -1 cup of crumbled Cotija cheese -3 cups of shredded Mozzarella -1 cup of chopped cilantro Stir it up and season with Tajín and Chili Powder Then get large corn Tortillas and heat them covered in the microwave, or on the stovetop. (If you don’t do this your tortillas will crumble when rolling. You can reheat them as you’re rolling if they start to cool down and crumble) Then add your filling to the tortilla, roll it up tightly and stick it with a toothpick. Fry in a pan on medium heat (with about a half inch of high heat oil) on all sides until golden brown (letting them rest on a paper towel or a cooling rack) When they’re done, you’re going to top them with the Elote sauce which is: -1 cup of sour cream -1/2 cup of mayo -1/4 cup of lime juice -1 clove of minced garlic -and Tajín and Chili Powder to taste (I usually make this at the beginning while chicken is marinating, and store it in the fridge.) Also top them with Cotija cheese, Tajín and fresh Cilantro. Enjoy💜
