Filet Mignon with Mushroom Sauce 📕Recipe here: ❂ Ingredients: 1 Filet Mignon Pinch of Salt 2 Tbs Olive Oil 2 Tablespoons Unsalted Butter 2 Cloves Garlic 1 Sprig fresh Rosemary 2 Sprigs fresh Thyme Asparagus For Mushrooms sauce: Olive oil 2 Tbsp Butter 100g. Shiitake Mushrooms 1 Shallot onion 1/4 cup Bourbon 1 cup Heavy Whipping Cream Salt/Pepper ❂ Cooking process: ⁃ Allow steak to sit at room temp for 30 minutes. Pat dry and salt generously. ⁃ Heat oil in a pan over medium/high heat for 2-3 minutes. ⁃ Carefully place Filet Mignon into hot pan (watch out for oil splatter). Pan fry 3-4 minutes or until the first side down has a deep brown crust. Flip steak to other side, put butter, garlic and herbs. ⁃ Constantly spooning the hot butter onto the steak, and only turn them once after they get nicely browned. ⁃ Using a thermometer, measure the temperature inside the steak, it should reach 130-135F. ⁃ Turn off burner and transfer fillet on the foil. Pepper, wrap in foil and leave for 5 minutes. ⁃ For a medium roast, the final temperature will be 140-145F. Shiitake Mushroom sauce: ⁃ In a well-heated skillet, add butter and olive oil. Add the shallots, then add the mushrooms and sauté until golden brown. ⁃ Pour in the bourbon and cook, stirring, until it has evaporated. ⁃ Then add the cream, salt/pepper, bring to a boil until the sauce thickens a little. Then turn it off and put it aside. ⁃ Season the asparagus with garlic salt, sauté in olive oil for 3-4 minutes, then transfer to a plate, top with the filet mignon and pour over the mushroom sauce.
