Replying to @nicki233422 for you! ❤️ Ingredients: 4-5 thin chicken cutlets 2 eggs 1/2 cup Panko 1/2 Italian bread crumbs 1/4 cup grated pecorino romano 24 oz jar sauce or homemade sauce 1/4 cup chopped fresh parsley, divided 6-7 deli pepperoni slices 5 slices fresh mozzarella 1/8 cup freshly grated pecorino romano A few pieces of fresh basil 2 tbsp: olive oil, vegetable oil, & butter salt & pepper, to taste 2 garlic cloves, smashed Directions: To make your assembly line for chicken: On a plate combine Panko, Italian bread crumbs, 1/4 cup grated Pecorino Romano, and cracked black pepper. In a separate bowl whisk together eggs, cracked black pepper, a drizzle of olive oil, and fresh chopped parsley. Season chicken cutlets with salt & pepper. Then coat the chicken cutlet in the egg wash mixture. Then coat the chicken in the breadcrumbs mixture and press it into the chicken. Repeat process on the rest of the chicken cutlets. In a pan with butter, vegetable oil, and olive oil; add in your chicken cutlets and cook for 5 minutes on each side. Once you flip the chicken add the smashed garlic cloves to the pan. Once chicken is done set it aside on plate. Mop up half the oil thats left in the pan. Heat up your jar or homemade sauce and then add half the sauce into the pan. Add the chicken back in the pan on top of sauce. To assemble in the pan, grate about an 1/8 cup of a Pecorino Romano hunk onto the chicken, add more sauce over each chicken, add a slice of fresh mozzarella on each chicken, then add a pepperoni slice on each chicken, and lastly top each one with a piece of basil.
