Msemmen - Moroccan Flatbread recipe: Ingredients: For the dough: - 3 1/2 cups (440g) white flour (all-purpose or bread flour) - 1/2 cup (70g) fine semolina or durum wheat flour - 2 tsp salt - 1 1/2 cups (340ml) warm water For folding the Msemmen: - 1/2 cup (70g) fine semolina - 1/4 cup (60g) soft butter (more if needed) Instructions: 1. Prepare the dough: In a large bowl, mix white flour, fine semolina, and salt. Gradually stir in the warm water until a soft dough forms. 2. Knead the dough: Place the dough on a clean surface and knead for about 10 minutes, until it becomes smooth and elastic. 3. Rest the dough: Divide the dough into small balls, each about the size of a golf ball. Place them on a tray, cover with a cloth, and let rest for at least 30 minutes (the longer, the better). 4. Prepare for folding: In a bowl, mix the extra semolina with some vegetable oil. Keep the soft butter ready. 5. Shape the Msemmen: Working with one ball at a time, flatten it on an oiled surface into a thin circle. Brush with some soft butter and semolina. 6. Fold the dough: Fold the top and bottom sides of the circle towards the center, then overlap the left and right sides to form a square. 7. Cook the Msemmen: Heat a pan or grill over medium heat. Cook each square for 2-3 minutes on each side, until golden brown and crispy. 8. Serve: Enjoy your Msemmen warm, with syrup, or as a side dish to savory meals. #msemmen #paratha #moroccan #moroccanfood #moroccanrecipes #flatbread
