2 chicken breasts or thighs, cubed into bite size pieces
2 cups @Cheez-It original crackers, pulsed
2 garlic cloves, minced 1 shallot, chopped fine 3 cups broccoli, chopped 1.5 cups basmati rice, uncooked 2 cups sharp cheddar, shredded (+ more for topping)
3 cups chicken stock, salted
1/2 cup heavy cream 1/2 tsp salt 1/4 tsp pepper 1/4 tsp dried mustard 1 tsp garlic powder
1 tsp onion powder
1 tsp smoked paprika Hot sauce and green onions to garnish, optional *Begin by setting your oven to 375 degrees.
*Prepare you veggies and cube your chicken. *To a small bowl mix all of your spices together. Set aside. *To a large oven safe pan, set to medium heat, add your olive oil and butter. *Add your chicken and seasoning mix, and fry for 1-2 minutes, just until the chicken begins to brown. Don’t over cook. *Add your garlic and shallot and sauté for 1 minute. *Turn off the heat and add your broccoli, rice, cheese, stock and heavy cream. Mix together. *Cover and let bake in the oven until 90% of the stock has been absorbed. About 15-20 minutes. *In the meantime add your Cheez-It® crackers to a large ziplock bag and breakdown using a rolling pin. Alternatively, you can add to a blender and pulse until fine. *Remove casserole from the oven when there is about 5 minutes left of cook time, top with more shredded cheese and the Cheeze-It® cracker topping.
*Return back to the oven for 5 minutes, uncovered. *Be sure chicken is cooked to an internal temperature of 165 F / 74 C. *Top with hot sauce of choice and green onions. *Serve immediately!
