1 tbsp ghee
1 tsp thyme
4 cups asparagus, ends trimmed, cut into 1" pieces
1 can of white beans, rinsed
4 cups of veggie broth
1/2 tsp sea salt + a crack of fresh black pepper
2 tsp red wine vinegar
Directions: 1. In a medium saucepan over medium-high heat, melt the ghee. Add the thyme, and sauté while keeping an eye on it until fragrant (2-3 minutes) 2. Add the asparagus, and coat the vegetables with the spiced ghee. 3. Add the white beans, salt, and pepper. Then, pour the veggie broth. 4. Bring to a boil, then lower to simmer (partially covered) for 5-10 minutes or until the asparagus are tender. 5. Transfer to a blender, and add red wine vinegar. Blend for at least 1 minute until creamy.
