Click the link in bio to download the free Daily Detox calendar @sabrinabawa to get a simple daily recipe to follow :) Serves: 12 Prep time: 15 minutes Cooking time: 15 minutes Total: 30 minutes Dry ingredients 1 1/2 cups oat flour 1 1/2 tsp baking soda 1/2 tsp sea salt 1 tsp cinnamon powder 1 tsp ginger powder 1/4 tsp cardamom powder Pinch of nutmeg Wet ingredients 1 cup Medjool dates, pitted and soaked (about 10) 2 tbsp coconut oil 1/2 cup almond milk 1/2 tsp pure vanilla extract 1/4 tsp sea salt 1 egg 1/2 cup raisins, soaked 1 1/2 cup shredded carrots, packed (3 medium sized carrots) Directions 1. Preheat the oven to 350°F (180°C). Grease the muffin tins with coconut oil. Soak the dates and raisins in hot water for 10 minutes, and strain. 2. In a medium bowl, add the oat flour, baking soda, salt, and spices. Stir well and set aside. 3. In a blender, add the dates, coconut oil, almond milk, vanilla, and salt. Blend until even consistency. 4. In a large bowl, mix the egg, and date spread. 5. In small batches, add the dry ingredients to the wet ingredients, ensuring they integrate in between each batch. Fold the carrots and raisins into the batter. It's important not to overmix the batter (it'll be very thick, but the carrot moisture will soften it). 6. Bake for 15-17 minutes.
