Roasted veg & chickpeas with whipped feta😍 recipe⬇️ * 1 sliced courgette * 1 sliced onion * 1 chopped green pepper * 1 chopped red pepper * 1 tsp zaatar * 1 tsp smoked paprika * 1 tsp chilli flakes * 1 tsp black pepper * 2 tsp all purpose seasoning * 1 tsp garlic granules * 2 tbsp olive oil * 1 pack drained chickpea - Preheat oven to 200°C - Combine all the vegetables and drained chickpeas in a roasting dish, add zaatar, smoked paprika, chilli flakes, black pepper, all purpose seasoning or salt, garlic granules and olive oil. Mix and spread everything out to a single layer, then roast it for about 30 mins. Whipped feta * 200g drained feta * 2 tbsp cream cheese * Juice of 1/2 lemon * 2 garlic cloves * 1/2 cup of olive oil * 3 tbsp honey * Chilli flakes as much as you like * Splash of water to thin it out when blending - combine all ingredients for whipped feta in a food processor and blend it till the feta is whipped to a smooth texture. Transfer the whipped feta into a serving plate. Put the roasted veg and chickpea on top and serve with bread. #whippedfeta #roastedchickpeas #meatfreemondays

Simple creamy coconut chickpea curry🤩 recipe⬇️ Ingredients 2 tbsp avocado oil 1 chopped red onion 1 tsp minced garlic 1 tsp ginger purée 1 tsp ground coriander 1 tsp ground cumin 1 tsp ground turmeric 1 tsp chilli flakes 1 tsp curry powder 2 tsp all purpose seasoning 2 bay leaves 1 can chopped tomatoes 1 can coconut milk 2 can of chickpeas Broccoli Chopped fresh coriander 1- sauté onion, garlic and ginger over medium heat for about 2 mins, add curry powder, ground cumin, ground coriander, all purpose seasoning, chilli flakes, bay leaves and turmeric stir and sauté for a minute 3- add chopped tomatoes, coconut milk and rinsed chickpeas then cover and let it simmer for about 10-12 mins, add broccoli and simmer it for 3 more minutes or till curry thickens to your desired consistency, taste for seasoning and stir in chopped coriander then remove it from heat 4- for garnish swirl in yogurt, sprinkle coriander, sliced red onion and chilli flakes on top and serve with rice or garlic naan. #veganrecipes #meatfreemondays

Add the beans with the water and frozen spinach let it simmer for about 5 mins then add double cream and simmer it for few minutes. Squeeze the lemon juice into the beans, stir in chopped coriander and remove it from heat. 3- before you serve swirl in yogurt and garnish with coriander. #meatfreemondays
