Chicken Salad Wraps: 1 cup roughly chopped cooked chicken (canned, rotisserie, or leftovers) 3 Tablespoons mayonnaise 9 sundried tomatoes, roughly chopped 1 Tablespoon capers 1 teaspoon white vinegar or lemon juice ¼ teaspoon salt ⅛ teaspoon pepper 1 Tablespoon finely chopped fresh basil 12 Mission Zero Net Carbs Sundried Tomato Basil Tortillas Sundried Tomato Dipping Sauce: ½ cup mayonnaise 7 sundried tomatoes 1 teaspoon hot sauce ⅛ teaspoon pepper 1. Prepare Chicken Salad: To a mixing bowl, add chicken, mayo, sundried tomatoes, capers, vinegar or lemon juice, salt, and pepper. Stir to combine. Taste and add more vinegar, salt, and/or pepper, based on taste preferences.
2. Prepare Wraps: Spoon a small amount of chicken salad on one side of tortillas, sprinkle on some chopped basil, and carefully roll into a wrap. Secure each with a toothpick.
3. Prepare Dipping Sauce: To a food processor or blender, add all dipping sauce ingredients. Blend until well combined, then transfer to a serving dish.
