#AD Have you ever cooked pickled onions before? Well, I've teamed up with @Sarson’sUK to bring you a new recipe for a DELICIOUS Open-Faced Patates & Hellim (Potato & Halloumi) Börek with Honey-Caramelised Pickled Sweet Onions, where those pickled onions are the star of the show. In this recipe, I add a touch of honey to finely sliced Sarson's sweet onions, and the range is amazingly versatile, bringing a refreshing piquant-sweet flavour & crunch, suitable for a variety of meals. Ingredients: 4 pickled sweet onions, finely chopped 250g cooked mashed potato 125g hellim (halloumi cheese), finely grated 1 heaped tsp dried mint 25g fresh flat leaf parsley leaves, finely chopped 1/2 tsp pul biber Pinch of sea salt and coarse black pepper 1 320g sheet of rolled puff pastry, cut into 4 equal pieces 2 eggs 10 pickled sweet onions, finely sliced 1 tbsp runny honey 1 tsp sesame seeds 1/8 tsp Nigella seeds Generous glut of olive oil Method: Preheat oven to 200c fan / 220c conventional. Whisk 1 of the eggs and add it to a large bowl, with the finely chopped sweet onions, mashed potato, hellim, parsley, dried mint, pul biber, salt and pepper. Mix everything together really well and leave to one side. Place the puff pastry pieces on a large piece of parchment paper, and lift onto a large shallow baking tray. Score along the perimeter of each piece of pastry, 2cm in from the edges. Fill the centre of each piece of pastry with equal quantities of the filling, whisk the remaining egg and brush along the exposed pastry perimeters, sprinkling the seeds along the egg-washed perimeter too. Mix together the sliced onions and honey, top each filling with the honey onions, drizzle liberally with olive oil then bake in the oven for 20-25 minutes until beautifully golden brown.
