Bring a little festive magic with this delicious dessert, perfect to end the meal on a Summer Christmas night. This is the Summer Snow. - Snowball: Connoisseur Classic Vanilla Dessiccated Coconut Scoop out the ice cream and roll it in the coconut, place on a tray and keep in the freezer. It’s okay if the shape isn’t perfect. Cherry Compote: 250g Cherries, pitted 50g Caster Sugar Half juice of lime Place all ingredients in a pot and cook over medium heat until consistency thickens. Set aside to cool. Swiss Meringue: 125g Egg Whites 250g Caster Sugar Whisk sugar and whites over a baine marie until sugars are dissolved, then whip to stiff peak with standmixer until cooled down. Transfer to a piping bag. Pipe a dollop of the meringue onto the plate and using the back of the spoon, create a well for the cherry compote. Then add some cherries and grated lime zest. Take snowballs out of the freezer and shape again to a nicer ball and place on top of the cherry. *Perfect as it is up to here, but for the adventurous cooks out there, add an extra step;* Heat up some rum or kirsch with a blow torch or gently over the stove (low heat) until it lights up.
