Baste the steak for 1 minute by adding smashed garlic cloves followed by rosemary into the pan and use a spoon to continuously coat the steak. • Remove the steak from the pan and slice into thin strips. Potatoes: • Prepare the potatoes by thoroughly washing then proceed to dry with paper towels. • Using a fork, stab multiple holes into the potatoes. Season lightly with olive oil, salt and black pepper. Tightly wrapped each potato with aluminum foil and bake in a preheated oven for 1 hour at 400°F. • Once your potatoes are fully baked, remove from the oven and let it cool down for about 5 -8 minutes. Remove the aluminum foil and cut a thin layer off from the top of the potatoes. Please be careful during this step because the potatoes may still be hot. Using a spoon, remove the inside of the potatoes and place into a bowl. Add butter, heavy whipping cream, sour cream, chopped chives, chopped steamed broccoli florets, salt, black pepper, parsley flakes and colby jack cheese. Mix thoroughly. Sauce: • In the same pan used to cook the steak, add minced garlic followed by finely chopped onions and cook for 3-4 minutes under medium heat. Add 1 cup of heavy whipping cream and season with the seasonings shown. Add a handful of mozzarella cheese and mix until the sauce is combined. Plate by stuffing the potato skin with the filling. Top with colby jack cheese, the sliced steak followed by the sauce then garnish with chopped chives.
