Day 29/20- Chicken Caesar Salad Ingredients: - 1 baby cos lettuce - 4 rashes streakyBacon - 1/2 Chicken breast - Turkish bread - 2 boiled eggs Dressing: - 4 anchovies - 1/4 cup Parmesan cheese - 1/2 lemon juice - 1/2 cup mayonnaise - 3 cloves garlic - 1 boiled egg - Salt and pepper to taste 1. Boil a small saucepan of water and gently drop 3 eggs in, cooking for exactly 6.5 minutes. Take out and run under cold water/ place in a bowl of ice water 2. Lay bacon flat on a baking tray lined with foil and cook in an oven set to 200°C for 11-12 mins 3. Slice bread into cubes, lay out evenly on another baking tray lined with foil. Pour olive oil on top, tossing to evenly coat then season with salt and pepper. Cook in the same oven for 5-10 mins 4. Pan fry seasoned chicken cutlets for 3-4 minutes each side, or until cooked through. 5. Add all dressing ingredients + optionally the excess bacon fat to a blender and mix until smooth and full combined. If the sauce is too thick, slowly add in cold water whilst mixing until the desired thickness is achieved. Season with salt and pepper to taste 6. Chop and wash cos lettuce, making sure to thoroughly dry it so the dressing will stick better. 7. Assemble by first adding lettuce to a large bowl, a good pinch of salt, and a generous amount of the Caesar dressing.
