Quesadilla chilaquiles… a God tier combo tbh 😎 get the recipe below‼️ Ingredients (for 2 servings): -5 strips bacon -3 ripe avocados, diced -1/4 red onion, finely diced -3 cloves garlic, minced -1/2 tomato, diced -1/2 jalapeño, finely diced -1/2 cup cilantro, chopped, plus extra for garnish -juice of 1 lime -kosher salt -black pepper -6 flour tortillas -8 ounces Oaxaca cheese, freshly grated -cooking spray -4 eggs -1/2 cup salsa verde -pickled onions -cotija cheese -radish, thinly sliced -hot sauce Directions: -Preheat oven to 425F. Place bacon on a foil-lined baking sheet and bake for 20-25 mins, until cooked through and slightly crispy. When done, place on a paper towel-lined plate and set aside. -Make guacamole: in a large bowl, add avocado, onion, garlic, tomato, jalapeño, cilantro, and lime juice. Season with salt & pepper, stir to gently mix, and taste for seasoning. Set aside. -Lay down 3 of the tortillas, and spread the Oaxaca cheese in a thick layer on each. Cover the cheese with the other 3 tortillas. Spray both sides with cooking spray. Either air fry or bake the quesadillas until golden brown and cheese is gooey inside. Once done, cut into small triangles. -Heat cooking spray in a nonstick pan over medium heat and crack in the eggs. Fry until sunny-side up with just the whites cooked through. Season with salt & pepper, remove from heat, and set aside. -Assemble chilaquiles: lay down the quesadilla triangles on two plates, then pour salsa verde over the top. Top with the cooked bacon (crumbled up), fried eggs, a large spoonful of the guacamole, some pickled onions, cotija cheese, cilantro, and hot sauce.
