Creamy Mushroom bacon tortellini 🥓🍝 Ingredients - 2 packs of mushroom tortellinis; cooked (reserve 1/4 cup of pasta water) - 8 slices of bacon cut into pieces - 1/2 an onion; diced - 4 cloves of minced garlic - two 8 oz cartons of mushrooms; chopped - 1.5 cups of heavy whipping cream - 1 tbsp of dijon mustard - 1/2 cup of chicken broth mixed with 1 tbsp of cornstarch - 1/2 lemon juiced - 1/4 cup of shredded parm Seasoning for mushroom mixture - salt to taste - pepper to taste - 1 tsp garlic powder - 1 tsp onion powder Seasoning added into sauce - salt to taste - 1 tsp garlic powder - 1 tsp onion powder - 1/2 tsp parsley To a large saucepan, cut your bacon into strips and cook until crispy. Remove from pan and add onto a paper towel lined plate. Drain bacon fat but reserve and use as you need to. Add in diced onions; saute. Then add in garlics and saute for 30 seconds. Add in mushrooms and seasonings for mushrooms and mix. Cook until mushrooms have shrunk down. Remove from pan and add to a bowl; set aside. To the same pan, add in heavy whipping cream then dijon mustard and whisk until combined. Add in chicken broth and cornstarch mixture. Continue whisking. Add in all sauce seasonings. Turn off the heat and add in lemon juice and whisk. Add your mushrooms and bacon back in. Add in pasta water and mix. Then add in tortellinis and top with fresh parmesan cheese.
