Caramel Apple Tiramisu I’m so excited to share with you this apple tiramisu! The combo of the apple, caramel, the cinnamon, and creaminess of the filling is just beyond delicious! I used @Lakewood Organic Pure Apple juice for the ladyfingers & the apple jam layer. Their apple juice is hands down my fave! It’s great for baking, cooking and drinking. Apple Layer 1 cup Lakewood Organic Pure Apple Juice 3 cups apples, peeled and fine dice 1/2 cup sugar 1 tsp ground cinnamon ⅛ tsp ground allspice 1 tsp vanilla extract 1 tbsp butter Place a medium size pot over medium/low heat. Add the butter, diced apples and spices. Stir well. Add the apple juice, vanilla and sugar to the pan. Mix and cook for 20 minutes until the apples are tender. Place in a bowl to cool completely. Ingredients 1pkg GF lady fingers 16oz mascarpone, room temp (if dairy free use df cream cheese) 8 egg yolks 1 cup of sugar 16oz heavy cream 1 cup Lakewood Organic Pure Apple Juice 1/2 cup water 1 cup apples, peeled and fine dice 8oz whipped topping Topping: ½ cup caramel sauce and ½ cup chopped pecans This will fit a 10x7 baking dish, at least 3" deep. In a mixing bowl add the sugar, lemon juice and egg yolks. Beat on high for about 5 minutes or until pale yellow and fluffy. In a separate bowl mix the cream cheese and heavy cream on high until smooth. Fold the egg ixture, apples into the cream cheese mixture & set aside. In a bowl add the apple juice. Dip the lady fingers into the apple juice & line the baking dish. Spread half of the apple jam on top. Pour 1/2 of the cream mixture on top and spread evenly. Repeat a layer of the lady fingers, apple jam & pour the rest of the cream on top. Place in the fridge to set for 6 hours.
