Caramelized Onion Mac & Cheese 2 large yellow onions, sliced 1Tbsp Algae Oil 1Tbsp unsalted butter — 4Tbsp butter 3Tbsp AP flour 1/2lb dried pasta 1tsp Dijon 1tsp sweet paprika 1tsp garlic powder 1tsp onion powder 1+ 1/4 cup cream 1 + 3/4 cup whole milk 3 cups shredded white cheddar -Begin by caramelizing onions in 1&1 butter/oil -Cook on low heat for multiple hours, stirring every so often until the onions are a deep brown color and very sweetly fragrant -To make the cheese sauce melt the 4Tbsp butter in a large pan. -Add flour and stir until fully incorporated -Add dry spices and stir in well. -Slowly add milk while whisking. A bit at a time then fully incorporate before adding more. -Once all the milk is added turn heat to medium low, cook for 5 minutes while stirring constantly -Add all of the cream and whisk in. Bring to an almost boil -Season with salt, add Dijon and mix. -Add cheese, whisk in well, turn off heat -Add caramelized onions to the sauce and mix -Cook desired pasta. Strain, and add to the sauce. -Mix to cover all the pasta.
