16 oz Penne Pasta
10 oz Rotel
15 oz black beans
11 oz mexi corn
1 1/2 cups chicken broth
1 1/2 cups cheddar cheese montery jack Garnish with cilantro * Preheat oven to 350
* Spray casserole dish with olive oil
* Cook Pasta and strain
* In casserole dish add cooked pasta, cooked chicken, drained corn, rinsed and drained black beans, drained rotel and chicken broth and about 1 cup of cheese and mix together well.
* Bake for 30 minutes covered
* Pull out and cover dish with the remaining cheese and cook until cheese is melted (about 5- 7 mins)
