Pork Loin w/Roasted Potatoes! Ingredients: Hatfield Brown Sugar Pork Tenderloin - 1 Yellow Potatoes - 1 1/2lb Asparagus - 2 bunches Olive Oil Salt Pepper Minced Garlic Parmesan Italian Seasoning Directions: 1. Start by cutting any of three larger potatoes in half. Add to a pot and cover with salt. Add a pinch of salt and boil until tender. 2. Trim and wash asparagus. Add to a sheet pan and drizzle on olive oil, followed by a few tablespoons of minced garlic. Finish with some salt, pepper and as much parm that feels right. Add to the oven at 425 and cook for 15-20mins depending on the thickness of the asparagus. 3. I love to use pre-marinate pork loins for easy dinners. This one was a brown sugar flavor that I just trimmed some of the excess fat off. Sear all sides on high for 3-5mins. Once seared add to the same oven and cook until internal temp reaches 150. Remove and let rest for a few mins. The internal temp will connote to climb to 160-165 and it’ll be ready. 4. Once potatoes are tender strain and add to a bowl. Season with olive oil, minced garlic, salt, Italian seasoning and Parmesan until your arm hurts. Add to a pan and roast for 25-30mins until potatoes are slightly crispy.
