Tips for a thriving sourdough starter: 1. Get a jar that is big enough for it, like this one. Give it enough room to grow so it doesn’t spill over. This simple tip will keep the good bacteria in and the bad bacteria out. 2. Give your sourdough starter a stir. A few hours after feeding, but well before its peak, give it a little stir like you see in this video. This helps redistribute the yeast and bacteria, so they have consistent access to food and introduces oxygen, which yeast needs to breakdown sugars and multiply. The aeration also deters the growth of unwanted bacteria. 3. Feed your sourdough starter at higher ratios like 1:4:4 and above (one part starter, 4 parts water, 4 parts flour) so there is enough food and it doesn’t go hungry between feedings. 4. Feed your sourdough starter twice per day if you keep it out on the counter or feed at least twice before using if you keep it in the fridge.
