This Albóndigas recipe is perfect for this cozy weather ☺️🤌🏻🍲 Ingredients: - 5 Roma tomatoes - 1 white onion - Water - Cilantro - 1 cup of rice - 2 eggs - 3lbs of ground beef - Black pepper - Salt - Oregano - Tomato bouillon - Chicken bullion - 2 garlic cloves - 1 chipotle pepper - 3 large potatoes - 8 carrots - 3 squash Cooking instructions: - Start by filling a small pot with water, add in 3 Roma tomatoes and half of a white onion. Let that simmer on low to medium heat for 15 min or until vegetables are softened. - While waiting for vegetables to soften fill a large pot with water and bring to a boil. - Meanwhile start preparing the albóndigas. I used 3lbs of ground beef. I added chopped cilantro, 2 Roma tomatoes, half of a white onion, 1 cup of white rice, 2 eggs and seasoned with black pepper and salt. After adding in everything I mixed everything with my hand until all the vegetables, rice, and eggs where combined into the meat. - To form the albóndigas start by getting enough meat to cover your palm of your hand and just start forming them into a ball shape and place to the side - In the large pot season the water with salt, tomato bouillon, and chicken bouillon - Now remove the 3 Roma tomatoes and half of the white onion from the small pot and place everything into the blender with about half a cup of the water from the pot also add in 2 garlic cloves, 1 chipotle pepper, 2 pinches of oregano, and salt.
