In a medium bowl, whisk together all of the ingredients. Let the mixture sit for 5-10 minutes, then whisk again to break up any clumps. 2. Cover the bowl and place in the fridge for 4 hours or overnight. 3. Melt the chocolate chips and coconut oil in 15-20 second intervals, stirring between each, until smooth. 4. Once chia pudding is set, divide into servings (can make up to 2) and drizzle the melted chocolate on top of each serving. Top with crushed cookies and place in the fridge to harden.
