INGREDIENTS: 2 tablespoons softened butter 1 tablespoon fresh dill, chopped Pinch of salt Pinch of black pepper Pinch of red pepper flakes 2 medium slices sourdough bread 2 ounces sharp cheddar cheese, freshly grated 4 slices American cheese 2 slices deli ham 2 ounces fontina cheese, freshly grated 6-8 dill pickle coins, patted dry Mayonnaise Dill pickle potato chips, optional, for serving RECIPE: 1. In a small bowl, combine the softened butter, dill, salt, pepper, and red pepper flakes. Stir to evenly mix. 2. On one of the slices of bread, spread on the butter mixture. Top that with the shredded sharp cheddar and 2 slices American cheese. Layer on the slices of ham. Evenly spread out the pickle coins, then sprinkle on the shredded fontina. Finish off with 2 more slices American cheese, then close the sandwich with the other piece of bread. 3. Heat a large pan on medium-low. Spread a thin layer of mayonnaise on the top of the sandwich, then place that side down onto the pan. Cook, using a sandwich press if you have, for 5-7 minutes. The bottom of the sandwich should be golden but not burnt. 4. Spread a thin layer of mayonnaise on the top (other side) of the sandwich, then flip the sandwich and repeat cooking/pressing on this side. When both sides are golden and all the cheese is melted, remove from heat. 5. Open the sandwich and place in some of the dill pickle potato chips.
