Soup season is approaching 💕 Here is the recipe for Vegetable Soup -2 lbs beef stew meat or chuck roast, cut into cubes -2 tbsp neutral oil -1 yellow onion, diced -1-2 carrots, peeled and diced -2 celery stalks, diced -1/4 cup green onions, chopped -6 cloves garlic, minced -1 tbsp salt or to taste -1 tsp pepper or to taste -1 tbsp paprika -1 tsp dried thyme -1 tsp dried oregano -1 tsp crushed red pepper flakes (optional) -1 can diced tomatoes -3 bay leaves -5-6 cups beef broth -2 bags of mixed vegetables (mix of corn, green beans, carrots etc) -1 lb russet potatoes, peeled and diced -Fresh parsley to garnish 1. Add oil to a preheated pot. Brown beef in batches over medium high heat. 2. Sauté onion, celery, carrots, green onions until soft, 4-5 minutes. 3. Add garlic, thyme, oregano, and crushed red pepper flakes and sauté 60 seconds. 4. Add diced tomatoes, salt, pepper, paprika, and bay leaves. 5. Add beef broth. 6. Bring to a simmer but not a full rolling boil. Cover and turn the heat down to low. 7. Cook for 3-4 hours or until beef is fork tender. 8. In the last 20 minutes, add the mixed vegetables and potatoes. 9. Taste and add more salt and pepper if needed. Add parsley * For a thicker consistency, add a cornstarch slurry (1 tbsp cornstarch + 1 tbsp water whisked together).
