RECIPE ⬇️ I have some exciting news coming very soon 🥳 This chicken can be used in so many ways! My kids even eat it, we have been using it for dinner as tostadas, today we will have chipotle bowls and many other meals throughout the week 🥳 Low calorie and low carb! Depending on serving size (serves about 6 meals) Macros: 157 calories | 3gF | 11gC | 23gP Ingredients: • 3 large boneless skinless chicken breast • 1 can Chipotle peppers in adobo (less for less spice) • 8oz can no sugar added pineapple chuncks with juice • 1 lime juiced • 3 garlic cloves • little bit of cilantro • cumin and salt to taste Mango salsa: • 1 mango diced • 1 jalapeño • 1/2 cup red onion • handful cilantro • 2 limes • salt For tostadas: I use mission tostada shells, 1tbsp plain non-fat greek yogurt in place of sour cream, chicken, top with lettuce and mango salsa! • Start by blending all ingredients to make your sauce. Add chicken & sauce to your crockpot & cook on high for 2 hours or low for 4 hours. Once done take out the chicken and shred. Add it back into crockpot and mix well. This next step is optional but makes a difference! Line a baking sheet with your chicken & broil on high for 5-10 minutes until ends are crispy.
