Simple Sweet Corn Chowder You will need: 4 to 5 medium sized potatoes (or frozen cubed hashbrown potatoes) 1 large onion 1 package of bacon 2 cans of cream style corn 1 can of whole kernel corn 1 carton of chicken broth Half & Half or Heavy Cream S&P To Taste Peel and dice the potatoes (keep in water to prevent oxidation while you prepare the rest of the ingredients). Peel and dice 1 large onion and chop 1 package of bacon. In a large soup pot, brown the bacon until it's crispy. Remove the bacon pieces but leave the bacon fat in the pot. Add the chopped onion, and potatoes, and add just enough chicken broth to cover the potatoes. Add 2 cans of cream style corn, and 1 can of whole kernel corn. Bring this to a boil, then cover and simmer for 12 to 15 minutes or until the potatoes are tender. Add back in the bacon along with 1 & 1/2 cups of half and half or heavy cream.
