They are gluten free, no refined sugar & great for portion control! 1 1/4 cups cottage cheese 2 eggs 1/3 cup brown or coconut sugar 3 tbsp almond flour 1 tsp vanilla extract 1/2 tsp baking powder Blend everything together, pour into a muffin tin & bake for 25 mins. Turn the oven off & allow them to cool in the oven for 10 minutes before pulling them out to cool completely.
