You’ve heard of whipped ricotta, whipped feta…how about whipped tofu? 🌱🥰 inspired by @Maya Leinenbach - the name is pretty straight forward, essentially you want to blend it to create a creamy consistency, use as a high protein spread, dollop over pancakes, or anything else beyond your creativity! 🧠🎉 Sweet version (spread over 3-4 slices of bread) 2 firm tofu squares 1 tsp EVOO/ neutral oil 1/2 lime, juiced 1 tbsp water 1 tbsp maple syrup Savoury version (spread over 3-4 slices of bread) 2 firm tofu squares 1 tsp sesame oil 1/2 lime, juiced 1 tbsp water 1/2 tsp garlic powder sprinkle of salt, black pepper This works well using an immersion blender or in a small food processor. Blend all the ingredients together until smooth. You can transfer to a bag for pipping like I did or simply spread over toasted bread or use it as a dip~ I top the sweet one with frozen blueberries and passionfruit, and the savoury one with sauteed cherry tomato, pickled onion and some toasted sesame seeds.
