🍂 Welcome back to my cozy corner! These past few stormy days have put me in the mood for soup. I had some leftover potatoes from the farmers market, so I decided to make potato leek soup. This recipe is perfect for serving 2 people, making it an ideal choice for a cozy dinner or lunch for two. Here is what you need to try this at home: 4-6 Golden potatoes or 2 Russet Potatoes 1 leek (white & green part) 2 cups of chicken stock 1/4 cup of heavy cream or plant cream 1/2 of a shallot 1 garlic clove 3 sprigs of thyme 2 bay leaves 1 tbsp of butter 1 tbsp of olive oil Seasonings: Salt & pepper to taste or 1 tbsp of garlic & herb seasoning Top with Chives, bacon & croutons Skin and dice your potatoes and set aside for later. Chop up your garlic clove, half a shallot, and the white & green of the leek (bottom of the leek, thoroughly clean). In a Dutch oven, sautee your leeks, shallots, and garlic in butter and olive oil until fragrant. Once fragrant, add your chicken stock, seasonings, and potatoes and boil until your potatoes are fork tender. Once fork tender, add your heavy cream and immersion blend until silky smooth.
