A reported 90% of cheese produced in America is made with fermentation produced rennet. While FPC is not GMO, it’s made using a genetically modified black mold called A. Niger. Pfizer was the first company to take FPC rennet for cheese making to market in 1990. This was the first genetically engineered food approved for human consumption. Christian Hansen purchased the assets from Pfizer in 1996 and is now the leading producer of FPC rennet under the name Chy-Max. According to their FDA notice letter, Chr Hansen inserts a gene from a cow or camel into the black mold substrate. The microbes are removed during purification, so the end product is not considered a GMO. This rennet will be listed as vegetarian rennet on cheese labels. FPC is not allowed to be used in making organic cheese in Canada, the USA, and Europe.
