Separate the point from the flat by following the fat seam 4. Cut point into strips then cubes. (Smoke flat separate and slice) 5. Place cubes into foil pan with more seasoning, brown sugar, bbq sauce, butter and hot honey 6. Return to smoker for 2 more hours or until cubes are 205 internal 7.
