Plant defense chemicals are one of the most misunderstood scare tactics of grifters. First of all many of the chemicals they often call defense chemicals aren't actually defense chemicals, they're the chemicals that plants actively store things in in order to retain them for themselves. In the case of oxalic acid, it binds to calcium in order to hold on to calcium for the plant and so most of it is already bound. Phytic acid is where plants hold on to phosphorus, especially for germination and so again it's already bound. Now there are populations that are more susceptible to oxalic acid, of which I am one of those, but you won't see me scared of eating spinach you'll see me eating it as part of a varied diet.
