Mexican Cauliflower Rice and Chicken Bowls Add oil to a hot skillet on medium high heat. Cut 1.5lbs chicken into small bite size pieces and put chicken, 1/2 diced onion, and 1 diced green pepper in skillet. Add Salt and pepper (duh) Sauté until chicken is mostly cooked through about 3 to 4 minutes Add 1/2 bag of cauliflower rice, 1 jar of salsa, 1 packet @sietefoods taco seasoning, 1 freeze squeezed lime and Stir it all up Reduce heat to medium. Cover. Cook for 5 to 8 minutes. Cauliflower rice should be tender when done.
