Cajun seasoning or seasoned salt Preheat broiler to low. In a large pot, add pasta and evaporated milk. Fill the can of evaporated milk up with water 2 1/2 times and add the water to the pot. Bring to a boil over high heat then reduce to medium-low heat and let simmer, stirring frequently so it doesn’t stick, until pasta is al dente and absorbs most of the liquid. Remove from heat and stir in half of the cheeses, green chiles, chicken and seasoning. Transfer to a casserole dish and top with remaining cheese.
