full recipes below 𫶠CURRY TOMATO SOUP (serves 4-6) 2 Tbsp. ghee, butter or olive oil 1 onion, chopped 1 Tbsp. curry powder 1 tsp. smoked paprika 5 whole garlic cloves 1 pint cherry tomatoes 1 (28-oz.) can crushed tomatoes 1 1/2 cups chicken or vegetable broth 1 can (13.5-oz) can coconut milk In a large pot over medium heat, add ghee or butter and sauté onion until softened, about 7 minutes, stirring occasionally. Stir in curry powder paprika and toast for an additional minute; add cherry tomatoes and garlic and cook for two minute minutes. Pour in canned tomatoes and chicken broth, season with salt and pepper then reduce heat to medium-low and simmer, covered, for about 15 minutes. Add coconut milk and blend until smooth; taste and season with more salt and pepper if necessary. CHILI GARLIC NAAN GRILLED CHEESE (makes 4) 4 Tbsp. ghee or butter, divided 2 garlic cloves, minced 1 fresno pepper, minced 2 packages mini naan (8 naan total) 8 slices cheddar cheese 4 slices American cheese In a small skillet over medium heat, melt half of the ghee or butter and add garlic and fresno pepper. Cook, stirring constantly, for just about one minute, until sizzling and fragrant. Brush on the top of the naan; then add cheeses (I like to do two cheddar slices with one American slice sandwiched between them.) In a large skillet over medium heat, melt remaining butter and cook on each side until golden and cheese is melty.
