Little rice balls 🫶🏻 Ingredients: 1/2lb rice 3/4 butter 2 cup pecorino Romano 1 cup scarmozza cheese (grated) A pinch of saffron (optional) 1/2 lb any kind of ham you like Tiny pieces of mozzarella in the middle Flour and cold water to make the pastella, to make a creamy consistency. A couple of cups of breadcrumbs for dipping. Directions: 1) In a pot of water add a pinch of saffron and salt. Then add the rice. Drain any access water 2) Mix in butter, cheeses and ham. 3) Let it cool down and then put it in the refrigerator for a couple of hours. Let it rest. 4) Begin forming the balls, adding a piece of mozzarella in the middle and forming a ball shape. 5) prepare the pastella by mixing flour and water until you get a creamy loose consistency. 6) dip the rice balls into the pastella and then the breadcrumbs. 7) Fry them in vegetable oil and add to cooking rack. #italianfood #sicily #sicilianfood #riceballs #arancini #cookingathome #cookingvideos #homecooking #recipes #recipe
