Easy dinner. Easy cleanup. 4 bone in chicken thighs 5 carrots, peeled and cut into chunks 8 small red potatoes 1 head broccoli 4 cloves fresh garlic, minced 2 sprigs rosemary A few sprigs lemon thyme S&P to taste Rinse veggies. Toss in a bowl and season to your liking. And you can use whatever veggies you want. These are the ones I chose. Add fresh herbs, drizzle, and olive oil, salt and pepper and toss. Spread out on a lined sheet pan with parchment paper Use the same bowl and toss chicken in it coating it with the olive oil and add more S&P. Bake in a 425° oven for 45 to 50 minutes until veggies are and potatoes are toasted brown. Remove from oven and set the oven to broil.
