This has been dinner twice a week this week. For the Japanese 🍠 which is my favorite kind in terms of texture. I coated with avocado spray (you can do olive oil). Added smoked paprika, a pinch of cinnamon , and salt and pepper. I roasted them for 20 mins stirring them from time to time and adding some more avocado oil if they looked a bit too dry before adding the bell peppers at the end with a bit more salt and pepper. For salmon: I used wild caught sockeye frozen (which I find really useful and convenient). I added salt & pepper to the fillets, coated it with Italian cauliflower “bread crumbs” but you can use real bread crumps, capers, and chopped tomatoes. Air fried at 325 until fully cooked.
