Whipping up some doggy scones with my favorite sous-chef 🐾🧁 Celebrating #NationalPetDay with treats and cuddles! Pumpkin Peanut Butter Doggie Scones Makes 18 scones *Scones: 1 cup coconut flour ¼ cup tapioca starch 1 cup 100% pumpkin puree 2 eggs ¼ cup all natural peanut butter (100% peanuts only) Glaze: 1/2 cup tapioca starch 1/2 cup 100% pumpkin puree *Toppings: 1 tb shredded unsweetened coconut 1 tb unsalted raw pumpkin seeds Preheat the oven to 300 F. Line a baking sheet with parchment paper. Measure out all the ingredients for the scones in a bowl and mix well with a wooden spoon until all ingredients are well incorporated and dough is smooth. Alternatively, process pumpkin puree, eggs and peanut butter in a food processor and process until very smooth. Add in the dry ingredients and pulse until a soft dough forms. Take some coconut flour and lightly flour your counter and place the dough onto the floured counter. With your hands or using a rolling pin, pat into a 6x6 square, flattening the top as you go. Cut the square into thirds horizontally and then into thirds vertically. You should have 9 squares. Now cut each square into two triangles. You should get 18 scones. Carefully place scones onto prepared baking sheet and bake for 30 minutes. Meanwhile, in a small bowl mix the ingredients for the glaze together until very smooth. When the scones come out of the oven, immediately drizzle them with the glaze, this helps the glaze set. Sprinkle each scone with a little shredded coconut and a few pumpkin seeds.
