packing this dinner up to a friend and his son tonight 🤍 rubberband trick works everytime • storytime — i’ve mentioned one of my best friends, Ali, before. as some of you know, she was taken from a rare breast cancer over a year ago now. i miss her everyday. i’m so thankful for all that she’s given me and to have gotten close with her husband and now 3-year old son (and her brother too, that’s Ben 💘) for dinner content inspo, i would text her and ask her what she was craving and usually make that. So today, i asked her husband. And he was craving her spinach artichoke chicken. I made it with a twist (she’d eye roll and giggle knowing i would of course have to make it ‘fancy’). 🪽 spinach artichoke chicken orzo recipe — 1-2 lb chicken thighs, boneless salt & pepper (about 1 tbsp per lb) 1 tbsp paprika 1 tbsp garlic powder 2-3 tbsp olive oil 1 onion, diced garlic cloves, minced 1 jar artichoke hearts (in water, quartered) 1 handful spinach 2 cups chicken broth (bone broth for extra protein) 1 cup heavy cream or coconut milk 1/4 cup parm reggiano, freshly grated if possible optional: dollop of cream fraiche 8oz orzo + preheat oven 400F + in a bowl, season your chicken with salt, pepper, paprika, garlic powder + in a well-olive oiled cast iron, sear chicken thighs each side for 2-3 minutes (it will finish cooking in the oven). set chicken aside. + in same pan with all the yummy chicken bits, add onion and garlic mix. saute until soft. + add artichoke hearts and spinach, cook down until wilted + add broth + heavy cream + cream fraiche + parm + add orzo + bake at 400F for 10-12 minutes #onepotmeals #orzorecipe #spinachartichokchicken #spinachartichokdip #easyrecipes #cookingathome #chickenrecipe #dinnerideas #familymeals #familydinnerideas
