This is how Sisig is made in its birthplace, Angeles City, Pampanga. (No egg, no mayo 🤭) INGREDIENTS For boiling: 1-1.5 kg pork mask and ears 2-3 garlic cloves, crushed 1 tbsp whole peppercorns 4 bay leaves Salt Liver paste: 1/4 kg chicken liver 1/4-1/2 cup calamansi juice 1/4 cup vinegar Salt Pepper Sugar Other ingredients: 2-3 large onions, diced Hot chili peppers, minced Margarine or butter INSTRUCTIONS 1. Submerge the pork mask and ears in water and add the garlic cloves, bay leaves, peppercorns, and salt. 2. Wait until it boils. Once boiling, turn the flame down to medium, cover, and let it simmer for 1 hour or until tender. 3. After 1 hour, uncover the pot, remove the scum and drop the chicken liver to cook for about 5 minutes uncovered. 4. After 5 minutes, the liver should be cooked halfway through. Turn the flame off and remove the liver and pork from the water. Let it cool. 5. Once cool, cut the pork into smaller piecer for easier grilling. Also, skewer the chicken liver into barbecue sticks. 6. On a hot grill, cook the meat and liver for 15-20 minutes, turning it every 3-5 minutes. 7. Once the meat is tender and looks slightly charred, take it off the grill and let it cool. Careful not to overdo the charring. 8. While waiting for the meat to cool, prepare the liver paste by mixing the grilled liver, calamansi (or lime) juice, vinegar, salt, and pepper in a bowl. Mash everything together into a paste. 9. Dice white onions 10. Mince hot chili peppers. It’s up to ypu how hot you want your sisig to be. 11. Once the meat is cool enough to touch, mince everything roughly using a butcher’s knife or two. 12. Mix EVERYTHING together. Adding more salt, pepper, or sugar to adjust the flavor to your liking. 13. To serve, heat a sizzling plate til it’s smoking hot, put some margarine or butter, then the sisig mixture. 14. If you dont have a sizzling plate, just use a regular frying pan. 15. Serve with white rice and/or ice cold beer 😉 16. Derick, how about eggs and mayo?
